It could easily be the start of a Julia Roberts movie. Julie, a pretty girl from LA working as a casting agent travels to Georgia in search of new talent for a reality show. Through a strange turn of events, a gentleman by the name of Kevin comes to audition. Sparks flew when they met, but it wasn’t until weeks later when Julie comes across his audition tape and notices he boldly comments on how beautiful she is. Julie decides to reach out to Kevin to let him know how flattered she was by his remarks. 4 years of dating and a move to the grand city of Chicago later, these two lovebirds are tying the knot this weekend.
One of Julie and Kevin’s favorite meals shared together included one of my favorite desserts – apple crisp. Since apples lend themselves to the fall season, we thought we would pay tribute to their first meeting in Georgia and make a peach crisp. Although we don’t often make desserts for our couples, we were so glad we did. This dish was delicious and super easy to make. We hope you enjoy!
Peach Crisp
2 cups fresh sliced peaches
1/2 cup flour
1/2 cup brown sugar
1/2 cup cold butter
1 tsp ground cinnamon
1/4 tsp salt
1 cup rolled oats
In a 8×8 clear baking dish evenly place 2 cups of fresh sliced peaches. To create crisp crust combine flour, brown sugar, cold butter, cinnamon and salt into dish. Mix together. Once blended fold in 1 cup rolled oats. Press crisp mixture on top of peaches, press in between gaps.
Homemade Whipped Cream
1 cup heavy cream
2 tbsp sugar
1/2 tsp vanilla extract
Using a hand mixer mix ingredients until whipped cream peaks.
Jim Beam Bellini
2 oz Jim Beam
2 oz peach schnapps
1 cup frozen peaches
1/4 cup ice
Blend Jim Beam, peach schnapps, frozen peaches and ice. Garnish with cherry and fresh peach slice.
