When Jessica and Eric first chatted with me about their Great Gatsby inspired wedding, my mind started racing with new ideas of recipes for our new blog segment. If you are not familiar with the 1920’s book written by F. Scott Fitzgerald, the story is centered around Nick, a neighbor of Jay Gatsby. Gatsby is a mysterious millionaire who holds extravagant parties at his palatial estate. These parties always included wonderful food, which in the early 1920’s often consisted of finger sandwiches and smoked ham. The drink of choice of the era was the Mint Julip as well as Champagne. Our recipes today are just a fun spin on Jessica and Eric’s wedding theme and a toast to the roaring twenties.

Pineapple & Jalapeno Finger Sandwiches
Ingredients
1 jalapeno chopped
1 package softened cream cheese
¼ pineapple chopped
1 cucumber sliced
1 lb shaved smoked deli ham
cocktail bread – rye
salt & pepper to taste
In a food processor, mix the following ingredients. 1 chopped jalapeno (remove the seeds and ribs before chopping (unless you like it caliente). Chop and add ¼ pineapple to the mixer. Add 1 package of softened cream cheese. Blend ingredients to make the spread spreadable. Add salt and pepper to taste.
Toast the rye cocktail bread @ 350 F until lightly toasted brown. Remove from oven.
Peel and cut 1 cucumber into quarter inch slices.
To make the sandwiches – layer pineapple, jalapeno spread, ham, and cucumber between two slices of rye cocktail bread. Garnish with toothpick and olive.
Ginger Mint Julip
Ingredients
2 oz bourbon
2 oz simple syrup
seltzer water (club soda)
fresh mint leaves
1 tsp grated fresh ginger
sugar cubes for garnish
In a highball glass, add mint leaves, grated ginger, and simple syrup. Muddle the ingredients until muddled. Add the crushed iced and bourbon then stir. Pour seltzer water to the top of the glass. Add a mint leaf, sugar cube, and ginger to garnish.
