Tomorrow is a wedding we have been looking forward to all year. One of our dear friend Kim’s son is getting married and we are lucky enough to be the ones to capture he and his bride’s, Amanda, special day. We have known Kim for many years as we all worked together at the same office. Now, of course, this wedding is super near and dear to our hearts. I remember when Kevin was in middle school, high school, and then went off to college. Time goes by so quickly because next I remember when Kim came to work and told us about Amanda. Kim quickly knew from Kevin, that Amanda was something special and she had never seen her son so happy.
Everyone who knows the Spencers, knows their passions – their dog Sonny, Portillo’s, the Black Hawks and the Chicago White Sox. We did a nod to some of Marc’s favorite south side ballpark fare and created mini kielbasa bites. Alongside this we are creating one of Amanda’s favorites, cheesy fries. We hope you enjoy!

Spicy Cheese Fries
1 tbsp butter
1 tbsp flour
1 cup milk
fries
1 cup shredded cheddar
2 chili peppers in adobo sauce
Begin by making roux. Melt cheese in saucepan, once melted add flour on medium heat. Stir consistently for 3-4 minutes. Once roux is golden brown slowly whisky in milk. Once milk mixture is added and warmed. Slowly mix in 1 cup shredded sharp cheddar. Add chopped chili peppers keep warm server over hot fries.
Kielbasa Bites
1 lb polish kielbasa sausage
1 medium onion
Saute sausage and onions together until sausage is browned. Serve on small sliced buns with onions and mustard.
Silver Mercedes Cocktail
1 oz vodka
2 oz cranberry juice
champagne
Add vodka and champagne to ice in tall collins glass. Top with champagne and lime wheel.
