I have been looking forward to Francesca & Ryan’s wedding since last year when we started chatting about their big day. I quickly found out while spending time with these two at their engagement session how naturally joyful Francesca is and how Ryan easily brings out that smile and makes her laugh. While strolling around downtown St. Charles this spring during their session, we chatted a bit about favorite local restaurants. We both happened to mention Wok ‘N Fire, a delicious sushi and stir-fry place we both love to frequent. From the happy hour appetizers to the yummy cocktails, we both agreed it is one of the best places around for date night. Choosing a recipe for Francesca and Ryan was an easy pick. Marc is a huge fan of sushi so why not try making it at home and wash that down with one of our favorite cocktails – a sake bomb.

Shrimp Tempura Sushi Roll
1 cup flour
1/2 tsp baking powder
1 egg
1 tsp shortening
1/2 cup cold water
6 butterflied tail-on shrimp
1 cup mayonnaise
2 tbs cup sriracha
1 tbs lemon juice
1 cucumber
1/2 avocado
nori
1 cups sushi rice (prepared as directed)
2 tbs fish roe
Create shrimp batter by mixing flour, baking powder, egg, shortening, and cold water. Dip butterflied shrimp into batter, fry for 1 1/2 to 2 minutes. Remove from oil, dry on paper towel.
Create the Spicy Mayo by combining mayonnaise, sriracha, and lemon juice. Chill until served.
Slice 1 cucumber into long thin pieces. Slice 1/2 avocado thinly. Place nori on bamboo roller covered with plastic wrap. Place sushi rice on top of nori, flatten evenly on nori. Flip the roll and place the cucumber, avocado and shrimp evenly. Make sure shrimp tails are sticking out the ends. Apply pressure as you roll the sushi in the bamboo roller.
Apply fish roe to clean plate, and roll sushi roll. Slice sushi roll and plate. Drizzle spicy mayo on top. Serve with wasabi and soy sauce.

Pour Sapporo into pint glasses, leave enough room for sake. Fill shot glasses with sake. Drop sake shots into beer and enjoy!
