Brooke and Charles first met in high school. Brooke’s brother’s friend, Charles, was vising one evening for dinner. He overheard Brooke was having some difficulty with her AP physics homework and offered to lend a hand to his buddy’s little sister. A few tutoring sessions later and they started dating and have been inseparable ever since. Ten years have passed since their first romantic date to Denny’s and this weekend these two high school sweethearts will say I do!
One of Brooke and Charles’s most memorable meals happened while on their first trip together to New York City. After attending a Broadway show they had decided to search for a burger place which boasted the best burgers in New York. Being on a “recent college graduate’s budget “, they decided it was the perfect place to grab a bite. They wondered up and down 56th street looking for the location but were confused when they only saw high end hotels. Finally they arrived at what appeared to be the correct address but were a bit confused that it was the lobby of an upscale hotel. Brooke and Charles walked in and sure enough, around the corner from the lobby was a hole in the wall, cash only burger joint with a neon sign boasting, “Best Burgers in New York”. They proceeded to enjoy the best burgers and the best company with each other.
Southwest Burgers with Roasted Garlic Citrus Aioli
2 lb ground chuck (80/20 blend)
2 tsp Penzey’s Southwest Seasoning
1 medium onion
1 sweet pepper
1 jalapeno
brioche hamburger buns
Add Southwest Seasoning (Warm chili peppers with onion, garlic, pepper and cilantro, with a smoky hint of chipotle) to ground chuck. Mix seasoning in well. Create four 1/2 pound patties.
Slice onion, sweet pepper, and jalapeno add to oiled pan. Cook until tender. Cook burgers to your desired doneness. Toast brioche buns.
Roasted Garlic Citrus Aoili
1 garlic head
1 tbs olive oil
kosher salt
1/2 cup mayo
1 tbs fresh lime juice
Cut top of garlic head and put inside tinfoil. Drizzle with olive oil and sprinkle with kosher salt. Cook in 350 degree oven until golden brown and soft.
Remove garlic cloves and mash garlic. Add mayo, lime juice and pinch of kosher salt. Mix until smooth.
Mashed Tater Fritters
1 lb potatoes
1 egg
1/2 packet of ranch dressing mix
1 cup panko bread crumbs
Peel and cook potatoes until fork tender. Let cool and slightly mash. To potatoes add egg, ranch dressing mix, and panko bread crumbs. Mix together until well blended. With hands make 1 inch size potato balls. Fry until golden brown.
Assemble burger with hamburger patty, pepper and onion mix, shredded lettuce. Smear Aoili on bun for complete yumminess!
