This Saturday I have the wonderful privilege of shooting the wedding of an old friend. Rory and I went to high school together – and although we graduated many years ago, I was honored he thought of me when he and Lauren started their wedding plans. Rory has found something special in Lauren. When we met up for their engagement session this past fall, it was very apparent what a sweet and fun personality she has. This, of course, makes her a perfect match for Rory. When I heard what Lauren and Rory’s favorite food was, I will admit I was very excited. I haven’t tried a whole lot of Thai food, much less made it myself (if ever), so when they had mentioned that Thai was their favorite cuisine, I couldn’t wait to pick something new and different for their recipe. I must admit that this recipe was delicious! It has to be in my top 5 – and just typing up this blog post makes me hungry for it all over again. If you haven’t had a chance to try out one of our recipes… THIS is the one you definitely need to try.
Thai Chicken Skewers
1 tbs chopped fresh ginger
2 cloves garlic
1/4 c soy sauce
1/4 c honey
1 tbs fresh lime juice
1 tbs rice wine vinegar
1 tbs lime zest
1 tbs sriracha sauce
Combine all ingredients to make thai chicken marinade. Blend ginger, garlic, soy sauce, honey, lime juice, rice wine vinegar, lime zest, sriracha. Place sliced chicken breast in marinade refrigerate for 3 hours. Skewer and grill chicken. Serve over coconut Basmati Rice. To make rice, follow instructions on package. Substitute 1/2 water ingredient for coconut water.
Cucumber Salad
2 cucumbers spiralized
1 tbs scallions
1/4 c rice wine vinegar
1 tbs lime juice
1 tbs olive oil
salt and pepper to taste
Spiralize 2 cucumbers. In bowl add scallions, rice wine vinegar, lime juice, olive oil, salt and pepper. Refrigerate until served.
Team Mystic Blue
2 oz malibu rum
2 oz blue cracao
2 oz vodka
1 oz fresh lime juice
Mix all ingredients in shaker. Serve in martini glass with toasted coconut rim.
