If you are anything like Marc and, I you know July is the perfect month for grilling out. We have spent a lot of summer nights so far sitting on our patio with dinner on the grill. The heat of summer is here and it’s the perfect time to light the charcoal and enjoy some hot grilled delicacies. This recipe was inspired by the way Billy proposed to Maria on the 50 yard line of the Tennessee Titans stadium. It made perfect sense to tie in some tailgating fare for their custom recipe. Maria and Billy are saying “I do” tomorrow in front of all of their family and friends and we started the celebration early by making some delicious grilled chicken tailgate sliders. The chicken was perfectly cooked and the coleslaw and grilled pepper gave it just enough crunch to make this a tasty bite. And we couldn’t stop there – of course we had to make a cocktail for these two. Since they really enjoy ice cream so much, we made a small tribute to their pup Kosmo with a frozen Kosmopolitan. This may not be easy to whip up on a day of tailgating but it is perfect for a hot july evening after dinner drink.

Grilled Chicken Tailgate Sliders
whole butterflied chicken
2 tbs Italian seasoning
1 tbs olive oil
1 tsp kosher salt
foiled covered brick
1 sweet pepper
slider buns
coleslaw
Create chicken marinade by rubbing chicken with Italian seasoning, olive oil and salt. Start by getting grill prepared with hot charcoals. Place water filled aluminum can in center of coals. Placed butterflied chicken breast side up on hot grill. Place foiled covered brick on chicken to keep chicken flat on grill. Flip chicken half way through cooking. We added a sweet pepper on the grill for our sliders. Cook chicken to appropriate temperature, approximately 45 minutes. Toast slider buns on grill using a little olive oil. Top sliders with pulled chicken, grilled peppers, and coleslaw.
Frozen Cosmopolitan
3 scoops of vanilla ice cream
4 oz vodka
1 tbs fresh lime juice
1 cup cranberry juice
frozen cranberries for garnish
In blender add ice cream, vodka, fresh lime juice, and cranberry juice. Blend until smooth. Garnish martini glass with frozen cranberries and a lime wheel.
