When I met with Jamie and Bryant I couldn’t help but think how cute their first date story was. Bryant asked Jamie to go out and Jamie decided she had a taste for Tacos. They wandered around Chicago looking for a taco joint that was opened on a Sunday. Having found three restaurants already closed, they decided on a place, not necessarily Mexican, that at least served tacos. They sat down enjoyed a bit of conversation and I am sure Bryant was quite surprised when Jamie ordered a buffalo chicken sandwich. Jamie quickly realized that Bryant was a keeper when he was happy to go along on their taco adventure and never complained when Jamie went in a completely different direction.
I also love a good buffalo chicken sandwich so Marc and I decided with a first date story that funny, we needed to recreate this spicy dish. We hope you enjoy our take on a newly classic sandwich as we prepare to capture Jamie and Bryan’ts wedding tomorrow!
Buffalo Chicken Sandwich
Butterfly Chicken Breast
1 egg
1 tbsp milk
1 cup panko breadcrumbs
1 cup Frank’s Redhot sauce
1 tbsp butter
blue cheese crumbles
shredded lettuce
diced tomatoes
ranch dressing
chopped scallions
Prepare chicken breasts by dredging in egg and milk mix. Toss in Panko breadcrumbs. Fry in 375 degree oil for 7 minutes. Remove from oil and allow to cool slightly on paper towels. Warm redhot sauce and butter in microwave. Toss chicken in hot sauce. Top sandwich with shredded lettuce, blue cheese crumbles, tomatoes, ranch dressing and scallions.
Dirty Martini
(makes 2)
4 oz good vodka
1/4 oz dry vermouth
1 oz olive juice
4 blue cheese stuffed olives.
Shake ingredients and add to chilled martini glass, garish with olives.
